Chef Sittikorn’s
work with insects is not a one-off experiment. It comes from years of using them in the kitchen and understanding how different species respond to heat, fat, and transformation.

His focus is on how texture changes, how aroma develops, and how flavor behaves once insects are processed into pastes, powders, or sauces.

In this context, insects are treated as part of Thailand’s pantry, handled with the same technical attention he applies to herbs, ferments, and fire.


The Edible Insect Tasting Experience is structured as a proper tasting, not a spectacle.

Across 15 to 18 insect species, diners are guided to observe flavor behavior. This includes how crunch fades, how fat carries aroma, and how umami builds quietly rather than announcing itself.

One of the clearest expressions of the chef’s intent is the cricket sauce tasting.
Once insects are transformed into a sauce, the question shifts from “what am I eating?” to “why does this taste so complete?” The ingredient recedes, and technique becomes more apparent.

Drink pairings, both alcoholic and nonalcoholic, are designed to extend flavors rather than distract from them. Everything is paced, explained, and framed so the palate leads, not fear or novelty.
